So... April has been the month of soup. Since the launch of the One Hundred List in February I have found myself cooking more and more... and one of the foods I make the most is soup. I mean... who doesn't love soup? It's warm, filling and always hits the spot (especially on a rainy day in Seattle... but really anytime/anywhere).
Number three on my list was to learn to make five different types of soup and then recreate the soups without using a recipe. I even took it a step further and when I recreated the soups for my "test" I made smaller batches.... so I really had to have an idea of the proportions. So here are my five soups...
#1: Minestrone - onion, safflower oil, water, tomato sauce, garlic, salt, pepper, zucchini, carrots, mushrooms, celery, kidney beans and fusilli (pasta)
#2: Vegetable - onion, safflower oil, water, soy sauce, ginger, zucchini, carrots, mushrooms and quinoa
#3: Miso - onion, safflower oil, water, wakame (a type of seaweed) and miso paste (I used white and brown rice)
#4: Sweet Potato Bisque - onion, safflower oil, water, pepper and sweet potatoes
#5: Sweet Potato Lentil Stew - onion, safflower oil, tomato, turmeric, cumin, cayenne, coriander, cinnamon, salt, water, sweet potatoes and lentils
